Nose to Tail Heritage Hog Processing Workshop with Hand Hewn Farm
This is going to be amazing, folks! Join us here at ShireFolk for 3 days of practical, beautiful, efficient and reverent processing as the Hand Hewn crew guides us through the humane slaughter, butchery, curing and cookery of 2 heritage hogs we've raised on the farm this year.

Dates: October 29, 30, 31 (Typical days from 9-5, with Saturday being the longest and Sunday aiming to wrap up around 3)
Tuition: $600/person
Location: ShireFolk Farm Palmyra, VA

Day 1 - Slaughter. Humane dispatch, scalding, cleaning, offal and blood sausage, bourbon toasting.
Day 2 - Butchery. Quartering the animals, selecting and making cuts, packaging, prepping and rendering lard.
Day 3 - Charcuterie, Sausage-making, Feasting. Stuffing sausage and curing bacon, lots of taste testing,
Course Includes: Hands-on participation for the duration of the workshop, recipes and handouts to take home..
You'll take home: Skills, memories, confidence. Lots of edible bits and bobs from the weekend typically including, but not limited to: Rendered lard, pate and/or liverwurst, bone broth/stock, sausage, chops. ShireFolk goodies - rendered schmaltz, a dozen eggs, one bone broth package.

Lodging Available: Area AirBnBs are available, as well as rustic on-farm camping. There is a nice Best Western 30 min away in Zion Crossroads.

Curious to learn more and see the farm for yourself? Email us at ShireFolkFarm@gmail.com to set up a farm tour. A 2-hour tour is $50 for 1-5 people. Additional people welcome at $20/per. In 2 hours we can typically see and discuss our brooder and processing setups, meat bird and laying hen operations, sheep, hogs, high tunnel and garden. Email us for more info.
