3-Day Nose to Tail Hog Processing Workshop
​with Hand Hewn Farm

Join us here at ShireFolk for 3 days of practical, beautiful, efficient and reverent processing as the Hand Hewn crew guides us through the humane slaughter, butchery, curing and cookery a heritage hog we've raised on the farm this year.  You'll get 3 farm-sourced meals each day, and other goodies from the class to take home, like freshly-rendered lard.  Scroll down for a photo gallery of some course highlights over the last 4 years.

We truly can't say enough about this course - it's been life-changing for us.  After we hosted our first workshop here 5 years ago, we processed 3 more hogs in the months after with the knowledge we picked up from Hand Hewn.  These are great weekends to learn DIY processing, take a deep dive into butchery, or just learn more about where your food comes from and enjoy all the fabulous meals. Farmers and foodies alike will glean plenty from Doug and Andy, who really are first class artisans in their field.

You will receive hands-on instruction and opportunities for participatory experience for the duration of the class.  This truly is an opportunity to learn how to do this work at home and save yourself from processing fees and waitlists.  If you're not a farmer, but interested in this from a culinary angle, you'll learn how to procure whole animals or primal cuts and how to butcher and cure them.  Once you've cured your own prosciutto, you'll never go back - this class is a gateway to eating like royalty with just a little salt and patience.

Course Fee:  $850 for a single person,  $1600 for couples.
